Work on Croatia
As Croatia isn't a member of the European Union, legal employment is uncommon unless you're actually Croatian. However, if you're happy to pick up some cash in hand to make your travel budget go further, you should be able to find some casual work in the tourist areas - your great English will probably help, and Italian and German would be a benefit.
Remember though, that Croatia has near 20% unemployment, and working illegally is illegal, so could land you in trouble.
Study in Croatia
There are a number of good opportunities to study in Croatia, mostly summer programs or 'Semester at Sea' type classes. There are good universities in Zagreb, Dubrovnik, and Zadar. More information is available here, and here.
